Meet THe TEAM

As a tribute to Melbourne’s wine bars, pubs, and neighbourhoods, at its core, Bourke’s is a wine bar above all else. The food and drinks have been carefully crafted with this focus in mind, a collaborative effort involving Group Managing Director and Co-founder, Matt Richardson, Managing Partner & Wine Expert Brett Goss, Tara Margarita for culinary and Adam Schmidt (Group Beverage Director), Edgarito Santillan (Honky Tonks Tavern Co-founder), and Aled Burt (Bourke’s Bar Manager) behind the drinks. This collaboration aims to carve out a refreshing and delightful bar experience on Peel Street.

Born out of a desire for a bar in Hong Kong that treated wine, cocktails, beer, and food with equal reverence while still maintaining a playful and welcoming atmosphere. As cocktail bars in Hong Kong have already transitioned from their ‘fancy’ to ‘fun’ era, we aim to spearhead a similar evolution in the realm of wine appreciation.
